Diva In The Kitchen: Apricot Chicken

I've made this recipe a few times since I saw Rachael Ray make it on television.  I love the flavor combination of the sweet apricots with the savory onions.  It is really tasty and very simple.



I was a little flustered that day because I couldn't find my recipe print out, so I welcomed technology into the kitchen to help me.




A Rachael Ray Recipe


Ingredients

  • 2 tablespoons extra-virgin olive oil, 2 turns of the pan
  • 2 pounds chicken tenderloins, cut in 1/2 across on an angle
  • Salt and pepper
  • 1 large onion, chopped
  • 2 tablespoons cider or white wine vinegar
  • 12 dried pitted apricots, chopped
  • 2 cups chicken stock
  • 1 cup apricot all fruit spread or apricot preserves
  • 3 tablespoons chopped flat-leaf parsley, for garnish

Directions


Heat a large skillet with a lid over medium high heat. Add oil and chicken. Season with salt and pepper. Lightly brown the chicken a few minutes on each side, add onions. Cook 5 minutes. Add vinegar to the pan and let it evaporate. Add apricots and stock. When stock comes to a bubble, add preserves and stir to combine. Cover pan, reduce heat and simmer 10 to 15 minutes. Serve chicken with a sprinkle of chopped parsley.




I usually serve it over brown rice and sometimes with a side dish like spinach or zucchini.

Diva On A Budget

You don't always have to pay top dollar for great beauty products.  I personally hate paying full price for anything, so I am all about bargains, clearance racks, sales, and something grand for half the price.

I came across Chapstick True Shimmer when I was browsing in Wal-Mart one day.  I am a lip gloss/chapstick junkie, so I bought one to try out.


I purchased the Blended Fruit Sherbet flavor to try.  I LOVE IT!!  First, it smells SO GOOD, like fruit punch.  Second, it tastes good (not that I devour my chapstick, but you know what I mean).  Third, it is very smooth and moisturizing.  Lastly, it has a great subtle sparkley-ness that looks good whether you are wearing a lipstick or going au naturale.  It was less than $3.00 at my local Wal-Mart though I can't remember the exact price.

It seems like most online places have them for $2.49 to $2.99.  Walgreens should also carry them.  Chapstick True Shimmer also comes in the following flavors: Peppermint Rush, Tropical, and Botanical Berry.  I look forward to trying them all!

    



Also on my list of budget items is the La Cross Eyelash Curler with padded finger loops.  I was out of replacement pads for my old La Cross eyelash curler.  I looked everywhere for them and couldn't even find any online.  So I bought this whole new curler which comes with three replacement pads in addition to the one in the curler already.




 This is a basic, no frills eyelash curler that costs about $3.00.  I really like the removable finger loop pads.  It just feels more comfortable; and I feel like I can get a better grip.  It does the job it is supposed to do and doesn't cost much, so I love it for that.  The sucky part seems to be that La Cross doesn't make replacement pads that are sold separately.  So when I run out of pads, I guess I am going to have to get a whole new eyelash curler or look for a brand that has replacements sold separately.  Bummer because I don't like change very much.  Even at $3, I hate the waste of a perfectly good curler because these last a LONG time.

Overdue

Wow, I am WAY behind on posting.  I have so many pictures, topics, and ideas to share with y'all and never seem to find the time to post.

In my blogging absence, however, I have managed to get things done around the house that I have been meaning to do for some time.  I cleaned out the closet in my craft room and redid the doggy treats and things downstairs with the leftover short bookcase.  I reorganized my bathroom, cleaning out a TON of old makeup items and the like.  I started a new "eating plan" and exercise schedule and have lost four pounds so far!!

Now I'm going to run downstairs to get some hot tea made and begin posting....
