Beef enchiladas are easy too...I know you guys don't eat meat much, but you could use ground turkey or chicken. Brown the meat of choice, and saute some diced onion in with it, season with salt, pepper, garlic, and McCormick's fajita seasoning. LOTS of it. (I ordered some on <a href="http://www.amazon.com/McCormick-Fajitas-Marinade-Seasoning-30-Ounce/dp/B001EQ564O/ref=sr_1_1?ie=UTF8&qid=1359773624&sr=8-1&keywords=mccormick+fajita+seasoning" rel="nofollow">Amazon</a> because my local grocery store doesn't carry it. Now I have this giant bottle that almost doesn't fit in the cabinet.) Open can of enchilada sauce. Wrap meat in tortillas (I always use flour) and place in pan w/ sauce as described in your recipe. Top with giant pile of cheese. Baking directions similar. Garnish w/ cilantro and whatever else: sour cream, raw onion, avocado.
